Well this was operator error! Yesterday afternoon I renamed both my boot disk and my mirror within the Volume Manager, vea for 3.5. They were called disk01 and disk02 and I renamed them to bootdisk and rootmirror. I changed the names back to reflect what was shown in vxprint -hft and now I'm able to remove the boot disk and boot off of the mirror by issuing the following command at the ok prompt boot vx-disk01 Thanks!
