A few people replied. I'd like to thank them for doing so. I love this 
list. Its an invaluable resource.

The solution to the problem is to specify a codepage after the unix2dos 
command. 
e.g.

echo "Hello" | unix2dos -437

to resolve the can't open /dev/kbd error condition.
