here is the winning answer:
I've set up two queues for just what you're saying. When you create a
printer of a different name, which points to the same printer by way
of the fundamental name which has the IP address assigned, you can then
manually edit the printer's interface program and turn on duplex printing
in it.
This is with HP printers and the JetAdmin s/w.
For example, in /etc/lp/interfaces/model.orig:
