Three parts to my question:

Part of one response (I probably deserved this! ;( )
This demonstrates that your nis commands are working perfectly well, but
you do not understand NIS+. Set your environment variable NIS_PATH to
"org_dir.$:groups_dir.$:$" -- that should allow nisls to work as you
expect it do.
To get the output you might be expecting, try using "nisls org_dir" and
"niscat hosts.org_dir." These should work without setting your NIS_PATH.
Setting NIS_PATH will tell nisls to list out the contents of org_dir
first.
Part two of my question:

Check /etc/nsswitch.conf aliases: seems to list nis, but you don't have NIS for
aliases? ypcat aliases maybe gives an error? So remove nis from that line.
Me: Bingo! This was indeed the problem.

Are you running a new Sendmail (eg 8.7.?), perhaps one that doesn't
understand NIS/NIS+ aliases?

I don't really know but are you aware that the aliases map in NIS+
is called mail_aliases

This looks to me as if there is some damaged NIS map, probably the map
mail.aliases. Try to rebuild it using the command "newaliases"
